The Easiest Roasted Veggies with Chickpeas

1 Small onion, thinly sliced 4-5 medium carrots chopped 1 red bell pepper, thinly sliced 1/2-1/2 red cabbage, thinly sliced 1 15 ounce can of chickpeas, rinced and drained 1 tsp. sea salt 2 tsp. cumin 1/2 tsp. chili powder Avocado oil or spray avocado oil 1 cup fresh herbs 1 tsp. garlic powder 1 ts
Mix onion, carrots, red pepper, cabbage, and chickpeas with all the dried spices. Add to a parchment lined pan and drizzle or spray with oil. Bake at 400 F for 45 minutes. Mix frequently to keep cabbage from burning. Once cooked add chopped herbs ( I like basil, parsley and a little cilantro). Serve cold or warm.
