5 Minute Banana Chocolate Chunk Mug Cake
1 medium overly ripe banana mashed 1 tbsp coconut oil (or butter) melted 1.5 tbsp monk fruit or maple syrup 1 large egg 1 tsp vanilla 1/4 cup oat flour 1/2 tsp baking soda 1/4 tsp cinnamon 1/4 tsp sea salt 1/4 cup crushed dark chocolate or chocolate chips
Stir together mashed banana, coconut oil, sweetener, egg and vanilla. Once combined add oat flour, baking soda, cinnamon and sea salt. Fold in chocolate chunks. Pour into microwave safe mug and microwave on full power for 2 minutes. This is not a perfect science and some microwaves will be done in 1 min and 30 seconds. best to under bake and add a few seconds as you go. Eat warm with a drizzle of nut butter!
